2019 Seneca Cabernet Sauvignon
2019 Seneca Single Vineyard Cabernet Sauvignon is a luxurious medium-to-full bodied wine bursting with aromas of white pepper and red capsicum. The palate is soft and luscious, with notes of fresh blackberries, red currants and a velvet-lined cigar box. 15 months spent in a blend of new and old French oak gives balance, integrated tannins, and a long lingering finish. A great match with charcuterie meats, garlic roast chicken and soft cheese.
The 25-year-old vines are nestled in the stunning Nagambie Lakes region of the Goulburn Valley. Long dry summers and cool nights allow the fruit to develop in richness and complexity; the perfect place to grow classic cool-climate Cabernet Sauvignon.
The average of these single-vineyard vines is 22 years, and the soil type is sandy clay loams over free-draining soil. Direct proximity to the Goulburn River. Warm summer temperatures offset by cool nights, resulting in grapes of high quality, harvested 15 March 2019. 8 days on skins with temperature-controlled fermentation (22-25°C) in small stainless-steel tanks/fermenters. Aged for 14-months in new and old French oak barrels.
